Pork Fat Rules!!!
BACON! BACON! BACON! Who doesn't love bacon? They have Bacon Camp, Bacon Fest, Baconaise, bacon makes everything better! The basic low down... bacon is cured meat from several cuts of a pig. If you want more history on bacon you can check Wikipedia or just Google it... cause this here ain't about to be a term paper on bacon. I just wanna share my love of it and the latest recipe experiment I tried out... BACON JAM!!! That's right, I said Bacon Jam. Of course I first came across this mighty invention via Pinterest... did a little research, checked out several recipe versions and decided on this one here...
Ingredients
- 1 1/2 pounds sliced bacon, cut crosswise into 1-inch pieces
- 2 medium yellow onions, diced small
- 3 garlic cloves, smashed and peeled
- 1/2 cup cider vinegar
- 1/2 cup packed dark-brown sugar
- 1/4 cup pure maple syrup
- 3/4 cup brewed coffee
Directions
- In a large skillet, cook bacon over medium-high, stirring occasionally, until fat is rendered and bacon is lightly browned, about 20 minutes. With a slotted spoon, transfer bacon to paper towels to drain. Pour off all but 1 tablespoon fat from skillet (reserve for another use); add onions and garlic, and cook until onions are translucent, about 6 minutes. Add vinegar, brown sugar, maple syrup, and coffee and bring to a boil, stirring and scraping up browned bits from skillet with a wooden spoon, about 2 minutes. Add bacon and stir to combine.
- Transfer mixture to a 6-quart slow cooker and cook on high, uncovered, until liquid is syrupy, 3 1/2 to 4 hours. Transfer to a food processor; pulse until coarsely chopped. Let cool, then refrigerate in airtight containers, up to 4 weeks.

I ended up with two pint size jars from this recipe....
I know it may not be pretty to look at and looks like you're scooping into a jar of lard but TRUST ME, if you're a true bacon lover you won't regret this little treat - it's like bacon candy!! I'm so happy with the way this turned out I just might start trying more bacon inspired recipes!!
this is just sinful, in a good way, in a great way; I think I just gained 15 pounds from reading this post. I might have licked the screen of my laptop.
