Southwestern Salad & Creamy Cilantro Lime Dressing

I came across this salad "recipe" and had to try it, mainly because of the dressing.  I absolutely love cilantro.  The recipe called for an orange bell pepper but the store I was gathering supplies from didn't have any at the time so I went with red and it all worked just the same. So I cut up a head of romaine lettuce, half a red bell pepper, a half can of drained and rinsed black beans, 5 chopped green onions, maybe a cup or two of thawed frozen corn and a mini pack of cherry tomatoes also chopped.  Put them all in a bowl like this... For the Creamy Cilantro Lime  dressing, I took about a cup of plain Greek yogurt, half a bunch of cilantro without stems, lime juice, garlic, olive oil, cider vinegar, and a pinch of salt and blended it in my wonderful Magic Bullet.   Most recipes I've seen for this calls for white vinegar... I like to live large and used apple cider vinegar instead.  Really I'm just cheap, already had the apple cider and didn't...

Crockpot Chicken Teriyaki

If you're on Facebook or Pinterest you've likely seen the posts for crockpot chicken teriyaki, much like I have.  Over and over I kept seeing the post, finally clicked on it and the recipe seemed simple enough... so simple I decided to change from the traditional Christmas ham dinner to chicken teriyaki for our Christmas meal this year.  Ok, so the kids didn't exactly go for it... but I did and it was delicious! So the day came and do you think I could find the exact recipe I originally looked at, no of course not... so I googled it.  Yep, as you suspected 100 upon 100's of versions of crockpot chicken teriyaki.  So as I reviewed the recipes most got a thumbs down simply because there were to many ingredients and or things that needed to be done.  Seriously, the whole purpose of crockpot is to just dump it and go right?  Not cook for 3 hours then do this for 2 then do this and then that and... you get the point. Here we are back to Sunday again and I'm due for another Sinday Confession... Sinday Confession...

It’s time for Sinday Confessional… yes I realize it’s not Sunday but someone was being a computer hog yesterday and since they were also folding laundry at the same time, I thought it best not to disrupt him.   So here we are, now let’s get down to business! One day while grocery shopping I saw that they had chicken in a can and thought ewww, then thought about salmon in a can, again ewww.   I was completely grossed out without even giving it a chance… just the thought of it gave me the heebie jeebies.   Wellll… this busy working mom of 2 was finding that trying to eat healthy, make actual meals for dinner etc. was just becoming a pain in the rear and an easier way had to be found… after thinking about it and how I eat tuna & spam and how they come from a can, why not give chicken a chance.   So here’s my Sinday Confession… I eat chicken from a can, and I like it!   I almost always use it where I can now in place of having to thaw and cook and actual chic...

Yes, I know I said I was going to be better about blogging my weight loss adventure this time... well I'm going to say it again, so what about it?  I've decided to blog about new healthy recipes that I'm finding & trying and maybe even a line or two here and there about how that darn workout just kicked my butt! The thing I can't decide on though... do I share the recipes as I found them, or as I made them?  If you've spent any large amount of time around me in the last 10-12ish year you'll know that I don't to often follow recipes to the "T" - I use them as a guide and go from there, making everything to taste and rarely measuring a thing... unless it has to do with baking of course.  A lot of my improvising is due to not having a certain product or not wanting to spend top dollar for an ingredient I'll likely use just once.
